RECIPES & BRINE TECHNIQUE
 
TURKEY BRINE PREPARATION
In a stock pot combine 1/2 gallon of apple juice, 1/2 gallon of chicken stock and half cup of Apple Cider Vinegar. Add 1.5 cups of Bird Dog Turkey Brine seasoning and bring to a boil stirring frequently making sure salt is dissolved. Remove from heat and let cool to room temp. You can add a little ice here to speed up the cooling if time is of the essence.  Pour cool brine over turkey (breast down) in your "brine container". Refrigerate overnight. If overnight is not possible, brine for at least 3 hours and this will still make a great difference in the flavor of your bird.
THIS STEP IS IMPORTANT
Rinse Turkey and pat dry. Not doing this will result in an over salted bird. Rub the skin with a thin layer of butter or olive oil or both before putting in the oven. Enjoy! *This blend is so much more than just a Turkey Brine. Use this same technique for roasted chicken, pork and white meat game birds such as quail and pheasant. I hear it's even good as the flavor base for chicken salad!
